Watermelon, Arugula, Feta Salad

I have about 6 full grown watermelons climbing through my backyard right now.  I gave one to my sister-in-law Jenn, for helping watch Fred for us.  I gave one to our friends, since we were visiting them for the weekend in Wisconsin.  So using Bill Clinton's arithmetic, that leaves me 4 large watermelons and about 3 weeks to eat them.  Challenge accepted!
Last night we carved up the smallest of the melons to make a yummy salad.  Here's the recipe:

Diced, deseeded watermelons cut into 1" chunks
Baby arugula
Diced feta cheese

dressing:
some EVOO
some fresh lemon juice
some salt
some pepper

Mix the dressing and pour it over the salad.  Toss together until well coated and serve.

Sorry I don't have exact measurements, this was one of the few times I didn't measure things out.  I really don't think there is a way to mess this recipe up anyway.
Now I gotta think up what to do with those other watermelons!  Let me know if you have any suggestions; otherwise we may just eat this delicious salad every night for the next few weeks.
